A Tip to Increase Your Restaurant Profits!

Did you know that as a California on-sale liquor licensee, you may be able to improve your revenue by selling packaged beer and wine for off-site consumption?

Depending upon your license type, it is very common for you to be afforded this added benefit and offer your patrons the ability to purchase a bottle of wine or a six-pack of beer to take with them at the end of their meal or with take-out and delivery orders.

A great example of this would be an Italian restaurant with a beer and wine license.  At the end of the meal, if the customers enjoyed a bottle of wine or two with their dinner, the restaurant owner could then offer to sell them a bottle of wine to take home.  If you are in an area with high tourism or if you serve specialty beer and wine products that may not be available or easy to find, then you may discover that your customers would love to take a bottle home and they probably do not realize that this is possible.

Here are a few things you’ll want to remember:

  1. Sales for off-site consumption would be limited to beer and wine.  Distilled spirits (hard alcohol) can not be packaged and sold.
  2. Check the conditions of approval on your California Liquor License.  Make sure that your off-site sales privileges have not been forfeited as a condition of approval.
  3. Review your Conditional Use Permit and zoning ordinances to assure that off-site sales are permitted.

If you are permitted to make sales for off-site consumption, make changes in your marketing strategies to capture some of this potential revenue.  Just as your waiter or waitress may ask customers if they would like to order dessert, also ask them if they’d like to purchase a bottle of the wonderful wine they just enjoyed.  Make sure your patrons know that this is an option!
